About Erica

My passion for baking began when I was a little girl working in my dad's small bakery in St Louis, Missouri. In 2011, I was asked to make gooey butter cupcakes for a child's birthday party. After looking online and finding only gooey butter cake and cookie recipes, I knew I had to come up with something of my own. That's when I created gooey butter cupcakes and bites. I realized I had something special as soon as I made them and tasted that crust. The flavor was classic gooey butter cake, but the crust took it to a whole other level. After 10 years of tweaking my techniques to get the crust juussstttt right - I came up with the version you know and love today. The characteristics of our gooey butter cupcakes and bites have a beautiful, caramelized, chewy and slightly crispy crust on the outside, while keeping the classic and soft St. Louis gooey butter center.

I started selling gooey butter cupcakes and bites at local farmers markets and had a lot of success. In 2022, I said goodbye to the corporate world and put all of my focus into my small business. I worked hard creating a name for myself (at the time I was The Chocolate Rooster) and eventually found my way onto The Drew Barrymore Show in New York City with my twist on the St Louis classic - Gooey Butter Cake. That was easily one of the best days of my life.

I'm still working local farmers markets and absolutely love it. It's now one of my favorite parts of my job. You can find us at the Lake St Louis Farmers Market on Saturdays from 8-12 starting in April through the end of October. We're also at Rockwell Beer Garden Farmers Market on Thursdays from 4-7 starting in May through the end of July.
